There are so many different styles and types of rum, and it’s made in a variety of different locales. Each one can look, smell, taste and even feel different on the palate. Rum is a great spirit for crafting a wide range of cocktails, and our bar team will be bubbling over with creativity as they explore this spirit and narrow down their research into three unique cocktails. As always, Chef Joey and team will create a menu to perfect suit.

Every amaro is different, and there are hundreds. Many are local and artisanal, though there are large brands, like Ramazzotti and Fernet Branca. Amaro, meaning “bitter” in Italian, is traditionally made by infusing grape brandy with a mix of herbs, flowers, aromatic bark, citrus peel and spices — a blend that can include anything from cardamom to elderberry flowers. Then it's sweetened with sugar syrup and aged. It's silky, bitter and sweet in varying degrees; and aromatically complex. We will feature three very different coctkails made with three different amari. Chef Joey and his team will be crafting a menu to bring out the nuances of each libation.

Saints Hills Winery is a project built out of passion, by the husband and wife team of Ernest and Ivana Tolj. Native to Dalmatia's Adriatic coast, neither were born into winemaking families, but their love of wine and entrepreneurial spirit has led to the creation of a premium brand with vineyards in both Istria and Dalmatia, and has resulted in wine becoming an integral part of their lives.

The white wines of Alsace are incredible on their own, but they are exceptional food wines. These whites are aromatic, complex and have a beautiful acidity that are particularly well-suited for Chef Joey’s style of cuisine. On this night, we will focus on three white wines from Emile Beyer, a family estate in the heart of Alsace that dates back 14 generations.

Troupis Winery is located in the heart of Mantinia at an altitude of 700 meters in the region of Fteri or “fern”. Tasos Troupis, supported by his children, has created a production and wine‐making facility by putting to good use the experience and love he has for the vine. It is a modern family business of small capacity, as they produce and bottle wine exclusively from their estate vineyards totaling approximately 16 acres.

Terah Bajjalieh is a queer woman of color who owns and operates one of the coolest natural wine companies in California. Terah Wine Co. works with organic and biodynamic vineyards. They choose to work with growers who care about the environment, the land, and the people they work with. The belief is that farming greatly dictates overall wine quality, which is always the focus for sourcing. The goal is to find unique microclimates and vineyard sites that are capable of showcasing outstanding expression and are capable of producing expressive, structured, balanced wine. We are excited to featuring three of their unique wines: Their 2022 sparkling, 2022 Falanghina Orange and 2022 Piquette.

We will be touching on three important Italian sparkling wines. We will begin with Prosecco Superiore DOCG, moving to Franciacorta, considered to be Italy’s “Champagne region”. Finally, we will finish with Lambrusco, which we all believe to be insanely delectable with food and should be ordered and enjoyed much more! The Lambrusco we will finish with is an off-dry version perfect to round out another incredible menu by Chef Joey Beato.

Jean Paul Brun is located in Charnay, a village in the Southern Beaujolais just north of Lyon, in a beautiful area known as the "Terres Dorées" or Region of Golden Stones.
